    Tortellini Pesto fresh basil pesto:
Pesto was ‘not’ pesto but a greenish sauce probably with color additive. Tortellini were undercooked. Got sick after eating there.

    Hi Maria,
Thank you for commenting on our fantastically freshly made pesto; we use fresh organic hot house basil and make our pesto fresh daily using the same basic ingredients as classic pesto; basil, extra virgin olive oil, garlic, toasted pine nuts & parmesan cheese. We also make our tortellini and ravioli fresh in house as well. The time and old world craft that goes into our hand crafted culinary treats is a process that has fallen out of fashion with most restaurants. We offer all our desserts made in house and from scratch and dressings to name a few. As you may know we offer cooking classes at Extra Virgin and have had pasta, desserts and appetizers; our next class is scheduled for January 17th and is focused on pizza dough, flour, flat breads and calzones. Our pesto sauce will be a feature sauce on 2 pizza varieties that we will sample. Please contact me directly on your next visit and I would welcome the opportunity to share our recipes and techniques with you. Thank you again for your comments and I hope this helps explain the freshness of our pesto. – Chef Scott

Glad to hear EV is your favorite happy hour place. Sadly, we’re not going anywhere, not opening another EV at this point in time. We shall see…Thanks so much.
